5 Healthy Ice Cream Recipes

What’s the most delicious way to stay cool when things heat up? Whip up one of these fresh ice cream recipes when you need to chill out from the Houston summer heat. If you haven’t made ice cream yet, now is the perfect time to start. Healthy ice creams recipes taste just as good if not better than as the artificial-ingredient laden treats lining the shelves of the grocery store. As a rule of thumb, keep it simple. These recipes all call for minimal, all-natural ingredients. Dairy substitutes include coconut milk, almond milk, cashew milk, and more. Make sure to use full-fat coconut milk, otherwise the ice cream won’t hold together as well. Instead of refined or even cane sugar, sweeten with natural sugars from fruit, nuts, dates, honey, or maple syrup.

1. Matcha Green Tea Coconut Ice Cream

You may have had green tea ice cream before while wrapping up your last sushi meal. Now you can try it in your own home! Beyond the novelty factor of the color, green tea ice cream tastes delicious and the matcha makes for a quick pick-me-up in the middle of the day. Matcha is highly caffeinated, but gives a sense of alertness without the jittery feeling commonly associated with coffee. It’s also loaded with antioxidants.

1 Cup Full Fat Coconut Milk
1 Cup Almond Milk
1/4 Cup Local Honey
2-3 Tablespoons Green Tea Matcha

Chill ice cream maker bowl in freezer. Mix ingredients together, pour them in the chilled bowl, and churn in the ice cream machine for 30-40 minutes. Enjoy immediately, or transfer to another container and store in freezer.

2. Dairy-Free Strawberry Ice Cream

Who doesn’t love the fruity goodness of strawberry ice cream? Keep in mind that there is a lot of sugar in strawberries. So, this recipe doesn’t call for any added sugar. Enjoy this treat a la carte or serve it with even more strawberries.

2 Cups Fresh or Frozen Strawberries
1 Can Full-Fat Coconut Milk
8 Pitted Medjool Dates
½ Cup Almond or Cashew Milk
1 Teaspoon Lemon Juice
2 Teaspoons Vanilla Extract

Combine ingredients in blender on high until smooth. Pour into ice cream machine bowl, and churn for 20-30 minutes. Enjoy immediately, or freeze for later!

3. Healthy Instant Peach Ice Cream

Mmmm, peaches. The only thing better than summertime peaches is summertime peach ice cream. This recipe doesn’t even call for an ice cream maker! Just whip up the ingredients in a food processor. What’s the difference between peach ice cream and a peach smoothie? Consistency.

2 Cups Frozen Peaches
½ Cup Coconut Milk
3 Tablespoons Honey (To Taste)
1 Tablespoon Lemon Juice

Combine ingredients together in a food processor or blender. Process on high, periodically scraping sides down, until smooth. Enjoy!

4. Nutella Banana Ice Cream

That’s right: nutella ice cream. Need I say more? Delicious, nutty, sweet, goodness. This minimal recipe only calls for two ingredients: paleo nutella and bananas. You can sweeten with a little maple syrup, but there’s plenty of sugar in the bananas already. As an added bonus, learn how to make your own nutella! Fresh foods taste better than anything from a plastic jar.

2 Ripe Bananas
1/3 Cup Paleo Nutella
*Cacao Nibs (Optional Garnish)

Slice the ripe bananas. Freeze for 2 hours. Combine frozen bananas and nutella in a food processor on high. Scrape the sides and blend until smooth. Eat this delicious treat, or freeze for later. Sprinkle with a dash of cacao nibs and enjoy!

5. Dairy-Free Mint Chocolate Chip Ice Cream

Fancy favorites like mint chocolate chip ice cream can still be your flavor even if you’re choosing healthy options. Cool mint flavors are perfect to combat the heat of summer, and also have a calming effect on you.

1 Can Full Fat Unsweetened Coconut Milk
2-3 Tablespoons Maple Syrup
½ Teaspoon Peppermint Extract
2 Tablespoons Cacao Nibs or Vegan Dark Chocolate Chips

Freeze ice cream bowl for 18 hours. Mix ingredients together in a bowl. Pour into the ice cream machine, and turn on for 20 minutes. When the ice cream is almost done, add the chocolate chips and spoon the ice cream to mix.

Some of these recipes use an ice cream maker. If you’re in the market for an ice cream machine, try this bestselling number from Cuisinart, which is so easy to operate. If you don’t have or want an ice cream machine maker, you can still make ice cream by freezing the ingredients and stirring every 20 minutes by hand. Or, even better, pour the mix in popsicle molds and try a freezy pop version instead. Remember that healthy ice cream is still a treat, loaded with sugar and fat, so enjoy moderate serving sizes.
